Spend enough time in the company of creative brewers and inspiration will strike. Often late at night, deep in the cups, drinking someone else’s experiment. Realization of potential is much easier if you are in the company of the inspiring brewers allowing discussion of a notion in concert. Sitting at Burial while drinking “Izakaya Afternoon,” conversation turned to the partnership of vanillin tones and umami of a miso addition acting as a cuisine cheat for barrel time. A couple of draughts later Shinshu was born. Burial came up and together we birthed a cream ale having a serious miso addition that moves it into the vanilla cake batter world of aromas without getting too sweet. Drink Shinshu and revel in alliance.

Can from John, thanks for the hookup. Slightly hazy light orange gold with a thin bubbly white head. Citrus orange aroma and flavor with bits of earth and pine. Tasty beer.

Strong Miso component will turn some away. I myself prefer their sushi inspired Saison, Hangju, as much better sushi beer. This one is built for steak, sauce, teriyaki & hibachi.
A) A hazy, orange-honey body w loads of lace.
S+T) Abundant smell and flavor. Of miso, lactose, yeast, some saucy, dark spicing. The miso offers an earthiness, a dirt and spice note. Like Hangju, plenty of pepper at the finish.
F) Feel is medium with lots of carbonation.
O) Cream ale matched with saucy, rich, deep, dark foods.

Canned 5/9/2017; three days old. Poured from 16 oz. can into Carton teku glass. It pours a hazy, orange-honey color with a finger of bright white head and extensive lacing. It smells of vanilla or lactose, yeast, some mild spicing. The miso is evident in the taste and provides an earthy sweetness along with the pleasant, mild spicing. There is a bit of pepper at the finish. The taste is really delicate and pleasing. It is medium in body with lively carbonation, and the 9% ABV gives it real substance. Overall, this is a unique cream ale that is very satisfying. Carton brews interesting, and fun, beers, and Shinshu is a great example. It would pair well with fish or chicken and is equally enjoyable sitting on the deck.
