This probably is the best Aussie Belgian that I've had that uses lighter malts. (Let's say I've tasted five.)
Spring Saison looks fine enough. But it starts to slip on the Smells... where is my malt and yeast ?
By the time I Taste it, I cannot tell this Aussie has not made the jump yet to understanding how to brew a Belgian. There are no spices apparent other than too many hops and they seem to want to hide that they have not yet figured out the yeast complexity. The same goes for mouth Feel... the hops linger too long without any other ingredient allowed to play. There is a good dry for food and there is a not-so-good-dry. Spring Saison still has the latter.
However, I give Two Birds a high Overall on this as an "A for Effort." I'm hoping they do better next Spring.
