Dear Jon Letter” is a tribute to our head brewer, Jon Drinnan, on his final day here with us at SARA. Beginning as our “Cask 200”, Solera-style Saison (its age nearly matching Jon’s seven year tenure) the beer was then transferred to both @venusspirits Agave barrels and @frederiksdalcherrywine barrels and later blended. The result is a complex and special offering that speaks to Jon’s unique maturation and talent.

Pours a crystal-clear, deep honey-orange body capped with just over a finger of choppy, fluffy, off-white foam; decent head retention yields a few spotty islands of cap, a sudsy, frothy collar, and a chunky tapestry of webby lacing drawn along the walls of the glass.

Aroma highlights a clean lacto-funk with a steady, underlying minerality upfront; shades of green strawberry and guava peel find pillowy black cherry sweetness intertwined in ripe, vinous white wine character dominating over time amidst a subliminally pastoral subtext.

Taste sees dried hay progress to subtle barnyard cut with a firmly contrasting juicy white wine transition; musty aloe grazes an agave slick over the mid-palate, bringing wisps of herbal vanilla, cherry esters on the back end as an oaky dryness finishes.

Mouthfeel shows a lighter body and a moderate-high carbonation, with slick textures building to a refreshingly tart, minimally acidic sheen; oaky grit prickles the back end, though a wet character cuts through an otherwise clean, bright finish as a delayed crispness is quietly refined.

Pleasing subtlety allows a steady funk to coat firmly earthy wine notes, washing the wispy, inherent cherry foundation in rustic oak and choppy lacto-zest; understatement rules as funk is eased and absorbed through the myriad barrel interplay calmly flowing across the profile.

Appearance: dark gold/amber. pretty minimal off-white head w/lacing
Smell: funk, brett, vinous.
Taste: tart, brett, funk, earthy, wood, vinous, cherry & vanilla notes.
Mouthfeel: slick and very dry. Coats mouth.
Overall: banger.
