We collaborated with the chefs at the intensely delicious and innovative Japanese inspired restauraunt, Kaizan, to create this complex, and balanced beverage. This pale ale has bright citrus and pine notes from yuzu, an eastern asian fruit, which is balanced by the subtle cucumber aroma from the kombu, a tea made from Japanese sea weed, arame. The white miso adds a gentle salinity and slight umami flavor.

Had this on 2015-01-18 in Columbia, PA from a 22 oz bottle
A - Very clear gold with a 1-finger white head that fades pretty quickly with mild lace.
S - Apple cider that is just starting to ferment, vanilla, light malt. Pretty sweet smelling.
T - Hard to characterize but I'll try. Sweet and bitter fruit. Leafy, bitter vegetable. Fermented bean. White pepper. Subtle blending of these flavors. Lingering non-hop bitterness with some acidity.
M - Light-medium body and carbonation. Quite dry.
O - Well made. Interesting set of flavors although not a something I'd look for on a regular basis.

Pours a brilliant dandelion yellow with just a tad of frothy white foam.
Some funkiness, melon, cucumber, and some spice.
Wow, melon and cucumber right hook the tongue with some pine to note and an earthy funkiness on the backend.
Mouthfeel is light and refreshing, but rather bitter on the finish.
Overall, an interesting beer to say the least, worth a shot.

Pours light straw yellow with lots of bubbles and a good one finger head that retains nicely. Smell has some tropical fruity hops forward along a slight hint of miso, some lemon and faint spicy yeast aroma. Taste follows the nose with some citrus and slightly herbal hop presence along with a light tart lemon flavor. Moderate amounts of sweetness and an interesting lingering burn on the tongue in the finish. Mouthfeel is crisp sweet bitter and somewhat on the thinner side for a pw brew.
