Saison brewed with plants native to Chicago: Sumac and Anise Hyssop.
Just like plants native to Chicago, this saison thrives in summer.
Cosmic Lowlands is lively, effervescent saison brewed with two of the many plants that are native to Chicago - sumac which brings lemony, berry notes and anise hyssop which imparts a subtle cooling licorice flavor.
We’ve always been grateful to the friends of Pipeworks who introduce us to new ideas and flavors. Johanna, one of those friends, introduced us and educated us on the importance of planting native plants to our environment, as they are well-adapted and provide habitat and food sources for many of our local wildlife and pollinators. They’re also relatively low maintenance!
We’re not experts but we’re happy to share a beer that’s the product of our recent education. Once you have a native plant in your garden, they lend themselves to being shared - just like beers!
