Poured into a Gavroche tulip. Pours a light golden amber with active carbonation and a fine one finger white head with good retention and lots of lacing. Aroma of sweet Belgian yeast, light stone fruit, pepper and coriander. Flavor of saison yeast, light peach and apricot, pepper, coriander with the spicing increasing into the finish as the taste dries out a bit, finishing peppery with some grassy hop and coriander bitterness, a bit astringent. Medium bodied with nice carbonation. An solid take on the saison style, starting almost Belgian, but with distinct saison style yeast, semi sweet at first and drying out to a lingering bitter finish. The finishing bitterness is a little stark and astringent, but appropriate for the style. Nice flavor progression. Refreshing.
