Saison fermented in new French oak puncheons with Brettanomyces (wild yeast). Bottle conditioned in cork and caged 750mL bottles for 15 months. Crisp, oaky, earthy, and gently tart. Lively and lovely.

Was lucky enough to pick up some Monkish once again while house sitting in Manhattan Beach. This one sounded interesting. Monkish’s website called it, “Saison fermented in new French oak puncheons with Brettanomyces (wild yeast). Bottle conditioned in cork and caged 750ml bottles for 15 months. Crisp, oaky, earthy, and gently tart. Lively and lovely. ABV 6.4% #Flecks”

After a small gusher from the bottle, poured a dark gold-to-light amber murky color with three fingers of frothy off-white head. Plenty of bubbles coming up along the sides of the glass, looking like a snow globe. Almost perfect watery, foggy and foamy lacing on the sides of the glass. Excellent retention. (Sight - 4.75)

Smelled really good out of the glass. Got notes of pear, green apple, green grape, Brett, oak, peppery spice, honey, earthy basement aroma, wet grass and white bread. Wasn’t getting any additional notes out of the bottle. (Smell - 4.25)

Wow to the taste. More tart than the nose. Lots of flavors and carbonation up front but settled down nicely. In order got pear, tart green apple, green grape, Brett, basement funk, oak, peppery spice, wet grass, hints of apricot and lemon zest. Really got better as it went down. (Taste - 4.00)

Medium body. Oily texture. Lively-to-fizzy carbonation. Abrupt, tart, oaky finish. (Feel - 4.25)

Just another excellent Saison from Monkish. (Overall - 4.25)
