Selective Perception is a dry-hopped saison featuring Hallertau Blanc and Motueka hops. Brewed with a base of pale malt and wheat, and dry-hopped with the two feature hops, it carries beautiful and expressive notes of white wine, grassy citrus, and grapefruit. Bottle-conditioned, it carries a billowing white head and supple mouthfeel. It’s a special beer, indeed—Enjoy!

Just wanted to try it when I was at TH a few days ago from the “other” bar. Told the bar tender I didn’t think I liked Saigon’s until I had gone to Hill Farmstead and found I liked them. He said try this and I did and really liked it. I would buy that again.

Can pour into a tulip glass.
Clear golden color with a foamy white head, good retention and lacing. Floral, grainy, crisp and sweet. Moderate to full body, creamy carbonation.

750 ml bottle.

Pours a hazy, pale golden color with a finger of fluffy white head. The head is surprisingly resilient, hanging around for a long time, eventually leaving a halo of lacing around the top of the glass.

Strong aromas of wheat, cracked pepper, grape skin, and earthy hops. There's some funk and yeast as well as a bit of herbal tea and damp grass.

The flavor has notes of white wine grapes, sweet citrus, wheat, black tea, and grass. Very hoppy on the finish.

The feel is medium bodied with moderate carbonation. Smooth and dry, but not the type of carbonation you want from the style.

Overall, this is a very good saison. It's not at all what I expected, and almost has more in common with a Belgian Pale but I digress. Very drinkable. Just needs to turn up the carb a bit.

750ml capped bottle into a Tree House teku. Shared with schen9303.

Pours a crystal clear goldenrod. Big, fluffy white head that sticks around forever. Thick, chunky, layered lace. Nose is coriander, rye, and peppercorn. Aromatic, slightly funky, and yeasty. Beer opens with notes of peppercorn and coriander. Nice yeasty bitterness up front. A light orange peel tartness in the middle but the hop presence is amply felt. End is more peppercorn. Floral notes. A funky bitterness. Body is light with ample carbonation. Prickly and lively on the palate and goes down sparkling but somehow also rounded. Sparkling finish with a dry aftertaste that sticks to the palate.

This beer makes a statement by how well done it is by classic Saison standards. Really a treat for the saison purist.
