Collaboration with Pen Druid Brewing

This beer is the true definition of a collaboration. Līgo was brewed using a wild yeast isolated from a small flower outside the Pen Druid brewery in Sperryville Virginia. It was delivered to us in the finest Perrier bottle a month before the brew, giving us just enough time to grow enough for a 4000L brew. For the base beer, we used whole malted oats from Copper Fox Distillery (also Sperryville Virginia), as well as Canadian 2 row barley, and Canadian un-malted wheat. We brewed all day, laughed, high-fived, and had a lovely dinner that night. Oh, the memories.

Extremely hazy peach juice color with off-white head. Aroma has tart fruit notes, some fermented pickles, dank hops, floral notes. Taste is yeasty, floral with some tart fruit like fermented overripe pineapple. Full bodied with medium carbonation. Nice flavor but quite yeasty, not as easy drinking as I would like.

Hazy, but a nice head that stands and laces.

Aroma of earthy straw with a slight floral and funk.

Flavour is wheat biscuit and sourdough bread, with a little vanilla, floral and funk.

It doesn’t seem like this yeast provides any glycerol, which is probably why the used the oats, but the body still comes up short.

Bright gold body, some haze, and a clean, white head that's thick with great retention. Lookin' good.
Plenty of yeast in the aroma, coriander, touch of lemon, hay.
Apple/pear, grassy, clean toasted malts, and great balance with a dry finish from a hit of pine resin bitterness. Yeast is lending some spice too, though less pronounced than in the aroma. Soft, delicate body.
Overall, a very approachable saison, superb balance, easy drinking.

purchased from the brewery oct 10 '17, consumed 2 days after. opaque bright yellow. clove, lots of bubblegum, and then some peach, apricot, lemon, and grapefruit. the fruit flavours linger on the finish, and become more prominent as the beer warms. wonderful creamy body on this beer. ends off with a really dry finish

Brewed with a wild Virginia yeast, malted Virginia oats and Ontario wheat and barley. I really like the yeast, which is very flavourful, spicy with light fruits. Beer is dry, with a touch of bubblegum. It finishes extremely dry, with a slight bitterness.
