473 mL can from the brewery; dated Apr 9 2026 and served barely chilled. A collaborative effort with Third Moon, this is their second iteration of this West Coast Pilsner.
Pours a clear pale golden colour, stirring up an inch of soapy, bubbly white head that fizzles off within a couple of minutes. Its remnants include a sudsy collar and a few patches of film on the surface; some spotty lace deposition occurs after each sip. Clean, grainy pale malts and whole grain bread on the nose, with hints of floral hops, pine forest and indeterminate citrus.
It tastes fine - grainy malts and bready, doughy malts come through initially, with citrusy hints of orange peel and grapefruit creeping up in the background. Floral, earthy hops and a restrained piney bitterness characterize the tail end, with suggestions of citrus, grains and pine forest lingering briefly into the aftertaste. Light in body, with relatively low carbonation that rolls limply along the tongue, giving this pilsner a smooth but tepid mouthfeel. It's easy to toss back, but no more so than any other run of the mill pils.
Final Grade: 3.71, a B grade. Paper Moon is a decent brew, but it hasn't changed my opinion on these West Coast Pilsners - I'd simply rather be drinking a regular German pils. I typically enjoy Cascade & Simcoe hops when they're used in pale ales, but in a pilsner? I just don't think it works that well. That's not to say I dislike this beer - it tastes fine, but it's also not what I want from this style. And that's OK. I might try this again, if they brew a third version in the future, but the two cans I bought earlier this week will do just fine for now.
