Wet Hop IPA
Bine Hunter is one of our most sought-after beers (and one of the most asked for!) and this 2025 edition is just as delicious as the ten versions that came before it.
This year’s release takes the form of a Wet Hop IPA, brewed with locally grown Cascade hop flowers from Hayhoe Hops in Aylmer, Ontario. These fresh hops were picked, delivered, and added to the hot side all in a single day.
Bine Hunter 2025 is firmly hoppy and vibrantly aromatic, bursting with notes of white grape, peach skin, honeydew melon, and cedar. Grab it while you can—this one won’t stick around for long!

473 mL can from the brewery; dated Sep 9 2025 and served slightly chilled. Like last year's edition, the 2025 release was brewed with Cascade hops from Hayhoe Hops in Aylmer, Ontario. However, this is listed at 6.5%, whereas last year's was only 5.6%, so clearly there has been some tinkering with regard to the recipe.
Pours hazy and turbid, its pale golden yellow-hued body topped with one finger of soapy, foamy white head that fizzles within a couple of minutes. A modest collar of froth is left behind, with respectable lace deposition after each sip; looks fine to me. Vivaciously verdant aroma of leafy, floral, woodsy hops, spicy herbs, grapefruit, orange peel, Gewürztraminer and stone fruit.
This is a really tasty pale ale. I'm getting grapefruit and orange, as well as peach, melon, pear and grape; hints of grainy malts and oats provide some background support. Citrus, melon and stone fruit persist into the back end, joined by floral, spicy hops and some resiny, earthy bitterness; a leafy/vegetal note precedes the fruity, acidic aftertaste, which doesn't linger for long. Medium-full in body, with restrained carbonation that gently prickles the tongue; the mouthfeel is smooth and soft. Good drinkability.
Final Grade: 4.26, a splendid A-. Over the years, I've had more than my fair share of Cascade pale ales. However, Bine Hunter 2025 stands out in that crowd: some of the flavours & aromas I noticed were unique & distinctive; quite different from what I've come to associate with Cascade. The wet hop process also endows the tail end with a green, resiny, slightly leafy/vegetal note that may not be everyone's cup of tea, but I for one loved almost everything about this beer. In terms of general quality, I'd say it's a coin flip between this and Jutsu - however, since this is only available for a few weeks a year (vs. Jutsu, which is available year-round), I'd lean strongly towards Bine Hunter while it's in season. Highly recommended.
