Welcome to Three Times Three Vol. 7! This is the seventh chapter in a series by Omnipollo that acts as a creative union between friends across many borders. For Volume 7, we were invited, along with five other breweries, to put our brains together to collaboratively dream up and design a single recipe. As part of the project, we each had the opportunity to brew it in our respective homes and offer it up to our local markets.
We're ecstatic to bring you the Bellwoods version of this collab: a bold, expressive Double IPA, using Citra Cryo and Nelson Sauvin Hop Kief, for notes of pineapple Crush, white roses, and that feeling when the sun tickles your cheek in the morning.

473 mL can from the brewery; dated Oct 22 2025 and served slightly chilled.
Pours hazy and turbid, its pale apricot yellow-hued body topped with half a finger of loose, bubbly white foam. It's depleted within a minute or two, reduced to a modest collar and a few wisps on the surface, with copious lace deposition after each sip (at least, early on in the session). The aroma is fruity and enticing, offering up notes of white grape, honeydew melon, grapefruit and lychee; hints of bready, wheaty malts, stone fruit and lime zest can also be discerned.
This is a tasty DIPA - the flavours largely follow the nose, with white grape, melon, lychee and pineapple coming through early on. Hints of bready, wheaty malts, grapefruit peel, stone fruit and floral hops develop later in the sip, with lemon hard candy, pineapple and melon dissipating into a sweet, mildly warming aftertaste. The alcohol becomes more noticeable as the session goes on, but overall it's rather well-integrated. Full-bodied, with low carbonation that weakly agitates the surface of the palate; the mouthfeel is pillowy-soft, very fulfilling and satisfying - likely this DIPA's biggest asset, as it makes for a dangerously drinkable brew.
Final Grade: 4.19, an A-. Bellwoods' version of this Three Times Three Vol. 7 collaboration is a thing of beauty to behold - and to sip! I wasn't aware that 'hop kief' was a thing... but then again, hops are related to marijuana, so upon further consideration, I guess I'm actually more surprised that this is the first time I've had an IPA that used it as an ingredient. The Citra Cryo also does an effective job of expressing that hop varietal's many positive traits - all in all, this is a fantastic DIPA. Unfortunately, it's out of stock, and probably won't be back any time soon - but at the very least, I'd encourage other BAs to give this collab series a try, if at all possible.

Wafts a fresh inviting hoppyness. Hazy look with lasting margin of head and lace trail down the glass. A little haze burn in the aftertaste. Fuller mouthfeel.Works!
