Got this and a handful of other beers on a recent trip to Windmill Farms. I usually think Societe’s stuff is a tad bit overrated, but a few lately I’ve really enjoyed. This was described as “You probably have heard of (and already love) Simcoe. It is a classic, “old school” hop, and a brewers favorite to this day. This batch is the absolute freshest batch- harvested in the fall and hot off of the production line at Yakima Chief. We originally contracted Simcoe for The Coachman, and specialty IPAs, but we also wanted to give it the opportunity to truly S H I N E in our single hop series. We could not be more pleased with the results. This edition of The Bachelor is medium bodied and very drinkable for a beer with so much flavor. Light citrus and floral notes on the nose. There is a pleasant bitterness, with a lot of traditional West Coast IPA characteristics. Starting off strong with a lot of citrus and some woodiness, then a grapefruit and tangerine pithiness takes over. Subtle savory, deeper tropical flavors linger on the tongue. Our brewer Schmaltz likes to refer to this Simcoe as the “Sprite” hop because you also get some lemon/lime notes.”
Poured a medium yellow clear color with three fingers of frothy white head. Plenty of bubble streams coming up from the bottom and along the sides of the glass. Excellent uneven lacing. Outstanding retention. (Sight - 4.25)
Smelled Simcoe, pine, lemon-lime zest, Sprite soda, garlic, grapefruit rind, tangerine, herbal, menthol and caramel malt. About as good from the can. (Smell - 4.00)
Taste wasn’t quite as good as the nose. Really malty. Got Simcoe, black pepper, pine, bitter aspirin, garlic, onion, caramel malt, grapefruit rind, body odor, herbal, menthol and wet grass. (Taste - 3.75)
Medium body. Oily texture. Lively carbonation. Long, spicy, bitter finish. (Feel - 4.25)
Outstanding overall for a West Coast IPA. (Overall - 4.00)

From growler to pint glass:
A: Clear, straw-yellow appearance. The growler is cold, probably less than 40 degrees, and there's virtually no head.
S: The nose is light, subdued. Hints of lemongrass, pine, maybe a little apple, blend with notes of honeyed crackers.
T/M: Flavors a bit more bold but not as hop forward as expected. Lemon notes are probably the most distinct nuance, with general citrus pith and pepper touching notes of honeyed biscuits. Light on the palate, refreshing, and more carbonated than expected.
A nice, drinkable IPA, although I was expecting more tropical and citrus essence from the Simcoe showcase. Nothing I would turn down though.
