Wooden Soul #5 is a Wood-Aged Saison fermented with two strains of Brett yeast and fresh pressed Winesap apple juice courtesy of Milk & Honey Ciders. It is aged in a mix of red wine and port barrels, where it is refermented on pressed pomace, ground up apple that goes through the apple press. Funky Brett character mingles with notes of dry, tart apple, producing an effervescent and thirst quenching ale.

port wine barrel aged apple saison with brett, super ambitious and super well executed. you have to like this sort of thing, as it almost is a funky cider as much as it is a beer. a lot of the apple sweetness, and thus flavor, are left over, the brett has not been allowed to ferment this down to dry, so the apple presence is at least as significant as the grain in it, but its a low alcohol and lighter bodied beer, so its not like the fruit is outrageous, its just really forward. the brett is cool, funky and mature, farmy and musty and wet and working, really nice fruitiness to it as well, and the wine of course adds a darker fruit vibe, cherry, walnut, blackberry, common flavors in a good aged port. the wood is there too, which is cool with the fresh apple, its like old and new at the same time, and there is a little bit of sourness to this too, a pucker without a ton of acidity, enough to cut through some of the apple sweetness, very nice touch. great carbonation and a lot easier to put back than a lot of these have been. overall a really cool beer, id like more of the port wine i think, but it remains somewhat delicate for having so much going on. i love this wooden soul series, they are really going for it with these recipes, and all the ones i have had have been great!
