Rooted Below is a blended stout from 2 barrels:
Heaven Hill, aged for 30 months.
Elijah Craig Toasted, aged for 22 months.

This version is the Rooted Below base that is then rested on Mexican and Papua New Guinea vanilla beans for over a week. This enhances the chocolate into more of a fudge brownie while calming a bit of the bourbon heat, and the longer you let it finish on your palette, the more you get the incredible subtle floral and spicy vanilla.
