Sourcing as many local ingredients as possible, we brewed this Grisette with barley grown locally at HopRidge Farm and malted at Emergent Malt in Zeeland, MI. We bittered with Cashmere hops from Top Hops LLC and local honey from Saul Lake Apiary. Oats and spelt create a light, hazy beer with a sweet honey and light ginger finish.

12 ounce can into tulip glass; no can dating, but is a recent release. Pours lightly hazy/cloudy deep golden amber/light orange color with a 1-2 finger fairly dense and rocky off white head with great retention, that reduces to a nice cap that lasts. Thick soapy lacing clings around the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big lemon, orange, peach, pear, melon, red apple, ginger, peppercorn, clove, honey, wheat, white bread dough, light banana/biscuit, herbal, floral, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, ginger, honey, and bready malt notes; with great strength. Taste of big lemon, orange, peach, pear, melon, red apple, ginger, peppercorn, clove, honey, wheat, white bread dough, light banana/biscuit, herbal, floral, grass, and yeast earthiness. Light-moderate peppery yeast/ginger spiciness, and light herbal/grassy bitterness on the finish. Lingering notes of lemon, orange, peach, pear, melon, red apple, ginger, peppercorn, clove, honey, white bread dough, light banana/biscuit, herbal, floral, grass, and yeast earthiness on the finish for a while. Great complexity, robustness, and balance of fruity/spicy yeast, ginger, honey, and bready malt flavors; with an awesome malt/bitter/spiciness balance, and zero cloying/astringent flavors after the finish. Light-moderate increasing dryness from bitter/spiciness. Medium carbonation and body; with a very smooth, creamy/bready/grainy, and fairly sticky balanced mouthfeel that is nice. Zero warming alcohol for 5.8%. Touch of lingering ginger spice heat. Overall this is an excellent spiced saison. All around great complexity, robustness, and balance of fruity/spicy yeast, ginger, honey, and bready malt flavors; very smooth and easy to drink, with the mellowly bitter/spicy/drying finish. Well rounded Saison yeast complexity, balanced bready malt backbone; and not overdone on the ginger. A very enjoyable offering, and spot on style example.
