a collaboration with diebolt, who i have heard from or thought of in years, but this is absolutely elite beer, my favorite overall drink from our recent trip to colorado, this is truly glorious, original and refined, funky and clever, done with yarrow, which you really dont see as a beer ingredient very often, super impressive overall, inspiring even, adored this from top to bottom! unassuming little bottle, blonde straw color to it, a little cloudy but not too thick or anything, and with a high airy bretty or belgian looking white head, peaky and lasting, tiny bubbles, gorgeous pour, looks springy and excited. the nose is killer, funky from the bottle conditioning with brett, an old world brux sort of profile to me, but some interesting saison yeast in play as well, white and black pepper notes, subtle green pear, really pretty and curious. it must be yarrow flowers not roots that this is made with, its not starchy to me or earthy in that way, and its very floral, blooming, almost feels full of pollen and like something i could be allergic to, but i love it. wheaty base, dry, some spiciness, not hardly tart to me in the least either, massively intriguing, and the flavor is just as good. the brett with the saison yeast is wicked together, funky and farmy and animal-like, even a danky mushroom thing, really cool. the grain is fresh, earthy, and might include some spelt, some unmalted wheat, or something heirloom and uncommon, its just different enough to stand out. it almost drinks like its been dry hopped with something new school, but it has to be the yarrow element. subtle dandelion, elderflower, spruce, and green melon even, sunny and summery and alive, fresh and mature at the same time, not woody really but there is a light white wine fruitiness to it, and there is some cool back end bitterness that kind of hits like over extracted green tea, which really is a nice way to finish this. rushing carbonation and persistent effervescence is the right texture for this, and its perfectly dry without missing anything at the end. this is of elite quality and uniqueness and is without question the best beer ive ever had from either of these breweries. among my beer of the year candidates so far this year, as good as this sort of thing gets, killer use of the brett with the saison yeast, and the yarrow makes it of a kind, awesome!
