when you are collaborating with perennial, you have made it in this country as a brewery, those dudes kill it, so good for these guys getting in with them. cleaner saison here with zappa and strata hops, modern and bright, only a little bitter, surprisingly minimal on the grain side, this is a pleasant spring drinker with a nice herbal hop presence that expands as it warms a little bit. yellow colored, pale without much shine, and lightly frosted looking. the head is an inch high, pure white, and has fine retention. tiny sized bubbles rising up but lots of them, looks good, approachable, and active. the nose and taste on this are similar, subtle key lime and coconut as well as green tea and elderflower from the hops, comes together well on top of a simple malt base thats pils-esque with some white wheat likely, but its dry, light bodied, and basic enough for the hops and yeast to do the driving. the yeast is estery, white winey, and drying, there still is a little rustic funk on it overall, but not like their brett beers we had when we were here, way faster, cleaner, and less robust, but not generic or sterile either which is great, how saison should be. the hops do put out a little sulfur and green onion, but i like the overall complexion and dont think they are overdone. quick finish on this one, lemon peel and white tea on the back end from the hops, maybe light pineapple too, contemporary but also bitter enough. great carbonation. overall a drinker, a solid contribution from all the elements, and a nicely refined brew. these guys are on a roll right now!
