wonderful beer here, oak aged saison with brett and dry hopped with the new elani, really well done, dry and interesting, real well hopped, the brett and oak make it quite mature, but there is a cool bright freshness to it as well, and it sings on the palate, man these guys have come a long way since the early days, they are so good now! blonde with some hazy but sunny, short white head, lots of bubbles though, and with an apparent medium wheaty looking body on it. the aroma is dry brett, brux type, white wine and white pepper flourishes to it but that rustic almost animal weirdness, so funky and quick to me, not wild or unfamiliar, but really nicely done there on the ferment. the oak brings some tannins, the grains are earthy and dry to my nose, and the hops come with hints of zested lime, dried apricot, and wet turf, i think elani is transformed some here by the ferment, which us unique given the hops relative newness to the scene, dont think ive had a funky beer with it yet, certainly not one this evolved, complex but tidy too. the flavor follows, quite a lot of hops to this, fruity up front and new school juicy dry hoppy with a citrus lead, then its the grain in the middle, still an old world sort of saison build to it so it does hit authentic and interesting, then the funk and oak late, definitely vinous, the hops are super compatible, and i dont mind the decent pop of bitterness they bring on the swallow, dry and quick but also really layered and dynamic beer. love the effervescence, the starchy body this holds, and the funk, very well developed. killer beer, looks like they have done a few different fun dry hops with it, would love to try some of the others! this is delicious and distinctive, impressive!
