something a little different here, and easily the most ambitious beer i have had from these guys, nice to see them shooting for something like this. its a dark saison aged on oak, and its quite weird in a good way. the yeast to me tastes somewhat unconventional, its not wild at all, but its also not the classic french saison fermented warm, it has a cool fruity funk to it, some belgian elements, and an earthiness that is not common in the style and that works super well with the darker malts. its also not as dry as some saisons, i like it having a little more malt character and even sweetness, and it makes it feel very much right on for the fall season, extended and hearty. the wood influence is there too, grounded and also earthy, nice with the yeast, and mellowing it some, but this would probably be just as good without it, its a subtle layer. dark fruits, belgian esters, wet ground, and light cocoa in here, very seasonally appropriate, and one of the better beers i have had from these guys overall!
