Canned 1/30/24; drank 3/31/24 @ the Yarchives.
See-through dull orange/yellow appearance.
A rough pour yielded a huge, noisy white head; decent, frothy lacing remained.
Corn, mild honey & wheat bread notes in the nose.
Medium mouthfeel.
Fresh corn, honeyed wheat & faint pine flavors.
The sweetness reminds me more of a helles lager, but this is refreshing & tasty. I'd have another!

I can't read the canning date but I bought it from the brewery yesterday. Drank 6/2/22
Being from the Beverly neighborhood, I'm super excited to have great beer in the area. I've been drinking more and more pilsners as of late, so I'm extra thrilled to love this one. The beer is SUPER crisp and refreshing in that way. It's super crushable as a pilsner should be and yet not boring. It's a tad sweeter than some other great pilsners, but not overly so. I'll be picking up more next time I'm around for sure. It's worth going down for to the Southside for this beer as the food was top notch too.

This was my 7th at the Oak Park 7th Generation Brewfest. (And I confess to being just halfway through the 13 I Had... so good reviews are hard to make.)
For Looking like an Adjunct, Little Wing Looks ok. Aromas are average, tho balanced. Tastes follow. Refreshing, bubbly.
A good beer to wash down the pretzels around my neck.
I do want to give Overall points to Horse Thief Hollow for keeping alive the story of horse thieves in Beverley, and approach to early Chicago, before it became a fancy suburb in the first half of the 20th Century. The brewery gives back to the community and, I read from reviews, is a good place to eat.

16oz draft poured into a tulip glass shows a clear, straw-yellow body with a quickly disappearing 1/4" head of white bubbles with a relaxed handful of gently rising bubbles, leaving a clean glass.
Clean, fresh air aroma with a faint hint of white bread and spice.
Flavor is beer!
Clean, crisp, lighter mouthfeel with a drying finish.
Overall a very well done "American pilsner brewed with 100% malted barley.
