Copenhagen 17/11 2023. 37,5 cl chubby bottle from Meny, Rotunden, Hellerup. Black and grey sombre label with a golden S.
Pours opaque, unclear amber with a mid-sized white head. Settles as thin layer of foam unable of covering the surface off the beer. Thin rim of foam running along the side of the glass. No lacing.
Aroma is medium intense with a light sweet fruity odor mingling with tart fume with an acerbic touch. Sweet oxidized apple. Grapes and currants. Tart gooseberries, vinegar.
Light carbonation. Slightly thick, oily, soft, lively and tingling texture.
Flavor is medium intense with a light sweetness followed by strong tart sourness. Aftertaste is tart and sour. Lingers for a bit. Finish is bone dry.
A quite dry and tart experience.

Bottle: Poured a reddish color ale with a large foamy head with light retention and minor lacing. Aroma of light tart cherry notes with some tart notes and light funky ester and vinous notes. Taste is a mix of tart cherry notes with some tart notes and funky ester with some oak notes and a vinous finish. Body is full with good carbonation. Well balanced mix of cherry, oak and funky tart flavors with better drinkability then expected and no significant level of acidity.

a blended mixed fermentation saison aged an absurd 42 months in white and red wine barrels, and done with grape pomace, really interesting little bottle, super reasonably priced for what it is, and one of the more interesting beers we had in a super heady session. an amber color to this from the bottle with a touch of pink, not a super excitable head despite visible carbonation, some viscosity and a little cloudiness here, looks as old as it is. the nose is funky like crazy, some really well developed brett meeting striking acidity and tannins from oak and grape, its mouthwatering and dynamic, notes of burnt citrus, caramelized grain sugars, and rich red wine, some peach or apricot character in play too, and an insanely interesting ferment overall. the relative lack of oxidation for its age is also of note here. the flavor here is awesome, the base saison is uniquely malty, some rye spice in the mix i reckon, nice deep grounded base for all the acid later on, i appreciate that in its construction. the grape character is interesting, vinous yes, but lots of other fruit suggestions too from red apple to raspberry, and its all heavied up rather significantly by all this wood. some familiar saison yeast type esters swirling, but this is more farmy and wild to me than cultured, and its way drier than it smells and looks. suggestion of cedar, wet tobacco, pool table felt, port wine, and almond all intermingle here, and this seems like about as far as this concept can be pushed, ambitious and patient and bold, i love this type of beer, its really original and good. it could feel a little more uplifting in terms of texture, but i like how slow this drinks too, it evolves a lot and id hate to have effervescence and perceived lightness rush me through it. i cant believe how reasonable this is priced. love the packaging, adore the beer, and greatly admire the brewery...
