i had way higher hopes for this, being a grain nerd, a lover of rustic saison type beer, and a burgeoning fan of this brewery, but this didnt pop out of the glass as overly unique, and while the grain part is in fact cool, the ferment is oddly generic for these guys, and the sourness and basicness of that part of it overshadows the uniqueness of the grain in my mind. the beer is pale with an orange tint, some sediment towards the bottom, and a rising white head with a short retention period. it smells quite sour, even vinegar forward, with a sharpness of lemon. underneath its spicy like rye, earthy like raw wheat, and even sort of bready, i like that element, but its not all that prominent, and i am wondering if this has soured more than intended since being bottled in 2019. the flavor is nice, but again fermentation forward and with a decent pucker, makes it less delicate than it seems to want to be. cereals, whole wheat, and light pepper character from the malt, i dig that part and there is some terroir to be appreciated there, but i am finding the ferment distracting, its vinous and woody too, some stone fruit esters swirling, a little bit unrefined to me, but it could just be fading. i wanted to love this and was stoked to share it with the boys, and its still tasty beer dont get me wrong, but i thought it would be something that it is not, or at least not anymore...

Nice oak aged ale. Lots of bretty must and bright citrus. Nose has so.e sweeter citurs and floral notes while the taste hits with bitter sweet lime and some under ripe stone fruit as it sits. Alongside dry hayfield/old barn notes.
Very dry and clean on the palate. Good stuff, would love to see it fresh some day
