Pleasant aromatics of juniper, lime and layers of gin-inspired spices combine with the subtlety of anise to add a faint mint-like characteristic on the nose. Yeast esters from the Ardennes/Dupont saison blend are very distinctive, and spicing from the rye carries throughout taste. Star anise and pink peppercorn compliment the clove-y yeast spice, but only briefly linger on the dry finish of this collaboration with our friends at Solemn Oath.

Collab between Penrose/Solemn Oath/Niche Restaurant served at their beer dinner with a hay smoked venison dish.

The beer arrived with a cloudy orange body that was noticeably bright and stays opaque through the meal. There is some limited creamy white head that lingers only briefly.

The smell is very inviting and complex. I get juniper and lime right away. There is enough of the flowery/earthy yeast ester to balance these scents as to not completely smell like a gin and tonic. There is a light pie spice in the background as well. A fellow diner immediately smelled the cardamom, while another got the mint. Clearly the complexities were at play across the table.

The flavors are very bright. The saison body is true to form as this beer drinks cleaner than the body would show. The finish is dry and the body is quenching. The front end is almost like a mojito with the lime, juniper, and mint. The saison yeast comes through with flowery phenols. I think the rye is mainly in the mid-palate and finish for me where I tend to get a mixture of spices. It reminds me of apple or pumpkin pie spices without the fruit/sweetness. There is enough malt body to give a hint of sweetness, which allows all of these flavors to have a canvas.

Another home run collab effort from Penrose like Hereafter with Perennial. Niche showed their influence in the cocktail flavor realm like on Elijah's Revival with Pipeworks. Look forward to more Solemn Oath and Penrose ventures in the future I'm sure.
