A Belgian ale brewed with an abbey yeast to deliver the style's classic spicy aromas and flavours with muted alcohol notes. A surprisingly complex beer for a style that was originally invented as Belgium's response to the rise of pale lager.

Appearance: Poured a hazy yellow with good carbonation and a finger of head that didn't lace but stayed around well enough.
Smell: Cookie shortbread and apricot are the predominant smells I get here, although it did require a bit of warming to come out, the potency is good.
Taste: It has this shortbread/brioche thing going for it that turns to it's lemon and apricot notes before a mild earth and herbal hop finish.
Mouthfeel: Mixed aftertaste is nice, the carbonation pans out around the 3/4 mark but was suitably good up until that point. Transitioning is good as well, but the whole beer comes across as light and mild. That said, it conceals it's 7% quite well.
Drinkability: As I said, it comes across as a bit mild, which isn't something I'm used to seeing in this style. It certainly comes across as very light bodied, which again I wouldn't expect a Tripel to express that trait to this degree. A bit gassy once it's down but I enjoyed it.
Final Thoughts: I suspect that I kept this around a bit too long and it mellowed out a bit too much, but given the style is one typically aged for years, I'm skeptical of that. Regardless, it's a solid Tripel and it is good to see an Ontario brewer making one, but one thing this beer stuck me as, was something very safe. Like the brewer knew Tripel is a fine line and things can go south quick. Well, at least that's my experience as a drinker. Thumbs Up.

Love their Customer Service, rare to find a Triple in Ontario, so kudos, slightly too gassy and needs to a notch sweeter, otherwise an excellent Tripel, super comparable to the dutch tripel found at the LCBO, keep it up
