TASTING NOTES
Double Predator is a behemoth version of our flagship saison. If allured by the subtle notes of rose, lilac, and ripe pineapple, subdued prey you will soon become. This beast merely leaves a warming dryness as the only sign of the stupor to follow.
SECRET TECHNIQUES
American-Belgian hybrid style combines free rise fermentation with a traditional Belgian saison yeast and a hefty, American style dry hopping. The heat produced during fermentation (typically removed by the fermenter’s cooling jackets) warms up the fermenting beer and enhances the fruity ester profile.

Pilsner malt, flaked wheat, honey malt, sugar, Chinook and Audacia hops, saison yeast

The original is a true staple - but this one is a welcome improvement. A must try - especially if you like the saison style. They just keep cranking out hits at off color!!

Since I added this brew, I should explain why this is still styled as a saison despite its 9% ABV. Everything about it reminds me of Apex... or almost everything, the ABV being the obvious exception. I'm presuming OCB doubled the malt (and extra hops for balance), but kept the same free-rise brewing "mistake" that now makes their Apex into its unique calling card and cash cow.
To be entirely fair (and have more confidence in what I'm talking about), I should drink a copy of Apex next to this... a challenge for me, given the ABV. (Also embarrassing me is that I've recorded 90 Apex on UnTappd in 4 years, making me #3 Loyal Drinker; but I still can't remember exactly what it tastes like and prefer a live copy.) Anyhow, Double's key test is how well it does with a variety of foods. And initial indications are good. I drank Double while preparing dinner and eating appetizers and around the edges. Fortunately, I just purchased a 4-pack at Mousetrap so I can broaden the food range.
As for a quick review... Double Looks like Apex in the pour, but neither is a prize (flaccid foam). Smells are like Apex, the attack of the Juicy Fruit. (Coincidentally, Wrigley's HQ is just across the river from Mousetrap.) Tastes are balanced, although Double seems to finish drier. Both are medium-mouthed and refreshing.
12/23/23 Enjoyed a second copy with a friend as holiday cheer... but not with food or with Apex to compare. But the basic impression remains the same: well-concealed ABV should suit Double at the table.
