This tart saison was aged in an oak barrel with whole cluster Niagara grapes grown here in a Chicago backyard.

Soft, rotund acidity presents itself alongside elements of spring harvest meadow honey and perfumed jasmine. Mid palate notes of dry hay and peaches lay chrysalis to an iridescent display of orchard fruits, lime zest, honeysuckle, and lambic-adjacent pineapple funk. A nod to the breathtaking array of potential and opportunity hidden in our surrounds that’s only a slight shift of perception away. It's pronounced, "High - dre - ad." They're a lesser deity in Greek mythology similar to elves that live in lakes, streams, waterfalls, etc.

Read the label on this magnum: "Old World Saison fermented in oak with local, backyard grown whole cluster Niagara grapes." (I didn't this to the description, but a monitor should feel free to.)

This is one of the better hybrids between the Wild style (which I do not seek) and the classic saison. As a Euro-Saison Head (nomenclature by StonedTrippin which only I seem to have picked-up), I adore the classics and have one almost every evening with dinner. Hydriad blends the two styles enough for me to have this again, but not again and again and again.

So the next time I have Hydriad, I will review. But guys, you gotta excuse me for now... (I just had a 1.4mm kidney stone surgically removed today, and I'm not supposed to be drinking. Don't tell my urologist !)
