Jumping on the juicy, the brewers at Burial Beer Company look forward in hoppy beer making by looking back. ...to when we were phantoms.
When We Were Phantoms leaps right out with radiant citrus perfumes laced with biscuit maltiness, tangy tropical fruit and a neon green herbal bouquet. Underneath the bright fragrance lies a light golden but dense foggy appearance. Fighting through the creamy froth, the taste of angel food cake, light honey and even lighter caramels lay gentle tracks of sweetness on the front of the tongue.
And then the hops explode on the middle palate and enliven the tastebuds with a fruit packed medley that starts with branch ripe mandarin orange, pink grapefruit and a squeeze of lemon. Tropical juices join the complex hop taste with passionfruit, kiwi, pineapple and under ripened apricot and berry. Firm bitterness closes the session with a grassy, herbal and tea like bite, sharing elements of sassafras, cedar and basil along the way.
Medium bodied and seemingly fuller with the persistence of bready, creamy and pillowy malts lingering back to support the hop bitterness, the finish is oddly both sharp and smooth with a piquant hop-derived spiciness, tannic and pepper finish. A long afterglow of citrus peels, rinds and their leafy verbena green vegetation character offers challenge and refreshment at equal rates.

Poured into a Thirsty Monk snifter. Bottom of can says 05/11/17
A- Pours a semi-hazy dark golden color with a 3/4 inch off-white head that retains well before becoming a thin ring around the edge of the glass and a large center patch of sheer surface foam. Non-resilient lacing leaves tiny specs behind.
S- Sharp hop aroma featuring notes of candied orange peel plus some alcohol fume.
T- Interesting flavor of hop resins that bring a lot of raw grapefruit rind to the table. There's also a bit of that chlorophyll green-ness you get with some of these hazy IPAs. Moderate bitterness and not much malt presence which I feel is kind of needed here to back up the hops.
M- Somewhat sharp from the hops and a bit thin. Medium carbonation and a light body.
O- Not Burial's best work. This DIPA, while quite drinkable for the ABV, is ultimately lacking in character and staying power. Needs more actual juicy, fruity hop character and less plastic-y quality without even a malt backbone to play off of.
