Double Barrel-Aged Imperial Stout Aged Twice in Bourbon Barrels
The coalescence of almost 9 years since we first made beer. An indelible etching on the tomb of our relics, and a reminder of the pathway we trudged along to stand where we now do. The tale of this massive earthen tool has carried us into Christmas with each passing turn around the sun. And this is our strongest beer we have ever made, just touching against the legal limits. Made of aged stock that reached over 16.2% ABV and was blended down for legality purposes, this blended Imperial Stout was forged of 65% Imperial Stout aged in fresh Willets bourbon barrels for six months and then racked into new Willets bourbon barrels for an additional six months, 25% Imperial Stout aged in Willets for almost 2 years, and 10% of young imperial stout base used merely to bring the alcohol back to legal limits. Welcome to our 2021 Cuvee. A hand-carved rock of ice melded with double oaked Woodford, accompanied by a slice of bourbon chess pie with caramel sauce, and a chocolate ganache with rum raisin.

Look - black and thick with a milky rimming and nice lacing
Smell - a ton of barrel chocolate booze with a slight coffee
Taste - chocolate caramel vanilla and a great woody barrel
Feel - full body with a creamy light carb but nice for the beer
Overall - really outstanding beer with some complex flavors
