Blend of Cognac Barrel-Aged Barleywine, Calvados Barrel-Aged Barleywine and Bourbon Barrel-Aged Barleywine.

And we stared into the savagery of flummoxing confusion. That which is not applicable or even minutely relevant. Yet one which empowers a long journey towards true self. A hand-picked blend of some of our most luxurious barreled ales, all wrapped into one package by our barrel team. Embark upon a sticky sea of bourbon-soaked dark fruits, apples, and oak with its consequent toasted marshmallow.

Picked up a 500 ml bottle from the Burial South Slope location 10-28-22 for $20.00. Packaged in October 2022; consumed 4-19-23.

Beer poured dark brown with a very nice light tan head with the first pour.

Nose is nice, this is very dark fruit forward.

Taste is very nice. The large malt base give notes of figs and brown sugar. Getting some hints of pear and apple from the Calvados and the bourbon barrel lends some vanilla sweetness. While the bourbon is not overly perceptible, it does act to balance most of the sweetness very appropriate for the style.

Mouthfeel is very nice, medium to large bodied and very smooth.

Overall this is a wonderful sipping complex brew that was a fun journey to embark on!

On tap at Dominion Wine & Beer.

Low to no head. Black and opaque. Heavy bodied and slick. Definitely an English Barleywine, with low hoppiness, a decent balance with the cognac alcohol and sweetness. This BW is Cognac heavy, a sipper but not too sweet or hot.

Appearance: Pours a clear cola color with a thin head that fades to a collar; speckles of lacing

Smell: Toffee and apple enveloped by the three barrels, each of which is distinctive though the Calvados edges the other two

Taste: Toffee and apple forward with the Calvados barrel supplementing the apple flavor; Cognac and Bourbon tones emerge, in the middle, with an apple cider aspect bringing up the rear

Mouthfeel: Medium to full body with low carbonation

Overall: It is hard to bring three barrels together and this works reasonably well, though you have to really like apple cider to enjoy the finish
