Imperial Stout with Blueberries, Toasted Pistachios, Toasted Coconut, Cocoa Nibs, Cinnamon, and Vanilla Bean

Anything else but something more. Absolutely nothing to behold. That fire was a bouquet of the dead. And that story was as make-believe as they come. Made intransigently without compromise with The Eighth State Brewing Company. A blend of 3 Imperial Stout bases, intending to meet our wonderful alcohol cap in this Northen state. Then aged upon dried blueberries, toasted pistachios, toasted coconut, Videri Chocolate cocoa nibs, Spicewalla cinnamon and Madagascar vanilla beans. Holy wars of taste, be thy guide into vast caverns of caramel coconut Macaron with blueberry meringue, vanilla creme and carnival spiced pistachios.

On tap at the brewery. Tan head. Black color. Thick.

Pastry stout all the way. Reminds me of OH but not barrel aged. Cinnamon, coconut, fudge, vanilla, caramel, granola. The blueberries don’t show which is fine, maybe they add something to it. Good mix of pastry adjuncts. Just so damn thick. Pistachios also show. Has an ice cream vibe to it (or would be good over ice cream). I’m good with my 4 oz pour, but I do like it.

Hey, we've got a bunch of extra stuff in the pantry we're not using. Can we come over and make a beer with all of it? Teaming up with Eighth Street Brewing, this stout has a curious blend of blueberries, pistachios, coconut, chocolate, cinnamon and vanilla in fridge-clearing fashion.


And These Are Depictions Of Yet Another Revolutionary Absence when the adults are gone and the kids get to make the rules. This brilliantly black stout blends several different recipes before pouring with an onyx-like appearance. As the scent of savory roast, light smoke, burnt berry, chocolate, sherry and amaretto spice tingle the nose. Sweeter and savory on the tongue, the initial taste is lightly syrupy with chocolate, molasses, toffee, candied nuttiness and a touch of cream.

And as the stout spills over the tastebuds, the middle palate saturates with dark roast coffee, bittersweet chocolate, hints of sherry, port and madeira along with a lightly smoky spice character. Lighter flavors of cinnamon and vanilla brings a softer edge to the more robust flavors and does so in a light horchata flavor. As the warmth of whisky frames the late palate, its a return of amaretto that shines though those nutty, toasty and woodsy flavors.

Full bodied, bold and off-cloying, this collaborative, clever and somewhat adhoc stout works in the end, trailing into a spicy Mexican coffee character with softer hints of marzipan and whisky to follow. Maybe its time for another Revolutionary Absence.
