Imperial stout with cocoa nibs, guava, cinnamon, and Ancho chilis

Time will not stop. Time ushers onward towards calamity, into damnation. No fantasy bewilders it. No force topples it. And its wake you may find that a different realm became of its path. A space where your creativity took no shape without it. That place where we forged our best relationships, those sparked in inspiration and grounded in laughter. Today we celebrate more than 10 years of friendship with the good folk at Salud as a backbone of our 1 year in Charlotte at the House of Relics. This hyper-elegant stout was born of a blend of several bases, and aged with fresh guava, aged ancho chilis, Spicewalla cinnamon, and a host of French Broad Chocolate cocoa nibs. Waft over the spiced hot cocoa, creole chocolate cake, and Pastelios de Guayaba sprinkled with espresso beans.

this is elite stuff, courtesy of my wifes travels to the brewery and a crazy mix of ingredients. my bottle says 14% abv. this is a huge stout done with cocoa nibs, cinnamon, guava, and ancho chili, such a sick mix, and it works super well, hides its absurd strength somewhat well, isnt freakishly sweet, and is as intriguing as it is well done! leggy and viscous and black, inky and without more than a thin layer of dark mocha bubbles resting on top. its near still but i dont need more carbonation in this, its slow pace is oddly lightened by the presence of the guava, which is a truly genius addition to it, sweet and tangy in the center, mouthwatering in the nose, slightly floral and citrusy in the flavor, its still behind all the roasted grain and the cocoa, but its unique in this style space and really sets this apart. for all the beers that rely on coconut, this does something cool but in the same realm. the cinnamon and chili are subtle, mostly on the swallow, but add some real dimension to this, so exotic and different, but all coming in waves behind the roast, which is dominant here, bittersweet, with espresso and leather notes, some real density and richness too for not being barrel aged, it isnt is it? chocolate abounds, some almost macadamia character, the tang of the guava, juiciness too uncommon in these, and the light smoke of the peppers to close with some warm cinnamon and subtle booze. insane beer, cool as an after dinner sipper, stays on the palate awhile but nothing is forced and its still stout first. epic name, art, and execution, i loved this! thanks to my wife for procuring, a great choice! i feel loved!
