1 pint 9oz bottle poured into a Treehouse Teku glass after a year in the cellar
Appearance: Oh boy, chocolate syrup/spent motor oil, in a very good way. Quite still. No noticeable active carbonation. After a minute or so a few tiny bubbles the width of a human hair don't even make a complete right around the outside of the glass. It's like a black hole; I held up my glass in front of newly changed light bulbs and not a ray of light came through.
Aroma: Tootsie Roll? There's something I can't put my finger on. Very complex, dark chocolate, almost raisin type nose.
Taste: Oh. Very, very good. I already want more, so here goes. Very dangerous at 15% with that flavor. No heat. Interesting aftertaste. Not bad, just interesting. I'm not sure that I can describe the flavor. Maybe this is a unique combination of flavors that I hadn't experienced before. I like it! This is very smooth for the adjuncts listed: cocoa nibs, chilis, ginger and vanilla beans. I'm not getting spicy notes from either the ginger or the chili. Perhaps due to the cellaring the spice faded. Either way, I certainly enjoy what I am drinking. These guys never seem to disappoint.
Mouthfeel: Very balanced. At 15% this could go a few ways. It's...not syrupy in a bad way but far from thin. Sort of coats the mouth and tongue in a thin layer of goodness. The lack of carbonation works really well here.
Overall: I'm only about halfway through my glass and still have the rest of the bottle. This is already a win. I wouldn't be out there drinking this on the regular, or even more than once in a sitting. Definitely a sharing type of beer. One for quiet reflection. Slow down, take it in and really enjoy this experience. I would 100% drink this again if someone offered it up to split. I'd likely buy it if the circumstances were right. Working my way through the cellar so I personally wouldn't rush out to buy a bottle, but if someone were looking to save something for a special occasion I think they could do a lot worse than this. Pretty amazing all around. I would highly recommend.
