Collaboration with Dogfish Head
We all deserve heroes. Transformational ones make the most indelible mark. Written on our imagination are their doings. Some sort of a path you may one day walk yourself. Without that we might never achieve our wildest fascinations. Without Dogfish Head we might not be here. And without Chicory Stout you may have never tasted our obvious obsession with coffee in beer. Thanks to their unbridled enthusiasm for twisting the narrative, we collaboratively made our own take on this cherished beer. A double-mashed, 6 hour boil stout with Methodical Coffee’s Santa Lucia coffee beans brewed delicately in the beer at 200F for 4 minutes. After fermentation we added more coffee beans and Methodical roasted chicory and licorice roots. We pick up toffee, toasted pecan, sweet licorice, and loads of coffee.

A - Pitch black pour with tight toffee colored lacing and little to no lacing.
S - Light chicory and char with delicate black licorice.
T - Chicory, black licorice, delicate char and chocolate malt sweetness laying the base while finishing on the sweeter, boozier side!
M - Big, thick, and silky with minimal warming which is impressive for the ABV in this beer.
O - This is pretty impressive and recommended (totally opened up as the beer airs out).

Picked up a 500 ml bottle from the Burial South Slope location 9-17-25 for $21. 2025 bottling consumed 2-21-26.
Beer poured black with a decent tan head with the original pour.
Nose has notes of moderately roasted malts, caramel, is kind of nutty.
Taste is well done as the moderate roasted malts let the chicory play and impart notes of caramel sweetness and nutty flavor as well. Vanilla beans also lend some sweetness but hopping rounds this out nicely.
Mouthfeel is medium bodied with each sip being very soft and smooth.
Overall, this is nicely done. Like the Dogfish Head chicory idea!

Dark, purplish brown pour, dark and opaque in the glass; nice, thick tan head, long-lasting, moderately dense. Nice roasted grain nose; lightly burnt toast. Rich and dense flavors; sweet caramel; nougat; dark roast coffee; coconut-like sweetness; dense and complex bitterness from various sources. Heavy with residual sugar density with lip-smacking stickiness; subdued alcohol warmth.
What a gorgeous collaborative effort! Rich with sweetness but not cloying, nicely offset with bitter, dark coffee tones and a near-elusive boozy presence. A well-done number!

Pours jet black with a thick dark caramel head. Has a strong coffee smell. Sweet roasted malt and some sort of spice in it, probably the licorice root.

Pours dark as ink with a dark tan head. Nose is a mix of roasted coffee and barrel char, slightly heavy on the nose. Taste is sweet, creamy coffee flavors come through. A little bit of char on backend of palate. Soft beer! ABV is not evident.
