Imperial Stout with Cocoa Nibs and Passionfruit

Chained to the weight of everything left unsaid. Bones cracking in the stillness. What's left after the silence is more honest than before. A hymn of endings. Dressed as peace. We crafted this Imperial Stout with the fine folks at Creature Comforts Brewing. And conditioned it upon fresh passionfruit and Peruvian cacao nibs from Videri. Enjoy triple chocolate glazed donuts drizzled in passionfruit icing and filled with ganache.

When the tried and true influences run thin, then the real imagination comes out. Weaving the flavors of passionfruit into an imperial stout provides such the challenge and the creativity. And it plays quite a song for the tastebuds.

The Deafening Song of a Silent Unwinding is Burial's attempt at such song, pouring first with a jet black appearance and tawny copper margins. As a dainty creme froth floats the stout, the scent of dark roast coffee is met with chocolate, fruitiness and a hint of funk. Sweetness slathers the tongue with the rich maltiness of blackstrap molasses, dark baker's chocolate, heavy toast and toffee. A curious fruitiness departs from the usual dark, dried and pitted fruits and more tropical with passionfruit and vinous funk to follow. All wrapped in a cocoon of chocolate covered espresso bean and the session is a peculiar as it is substantial.

Full bodied, creamy and lightly chewy, the passionfruit additions adds a mild acidic twang that cuts down the viscosity and adds a complex tropical fruit note. But a word to Burial, stop letting your brewers eat stamps when coming up with new recipes.
