500ml bottle that has been in the cellar since Christmas, 2024 poured into a Treehouse Teku glass
Appearance: Golden, relatively clear, light yet active carbonation. Almost looks like something is suspended in this, almost as if there is a floater on top. Not sure what that's about, but it looks good and I'm looking forward to this. The second pour was a little more aggressive. There's definitely some cultures suspended in this but by no means in a bad way. It's more opaque this time. Still light, but pleasant carbonation. Good amount of activity.
Aroma: Very pleasant, tart smell. No off flavors to mention. Tart, clean. Light salivation response. Maybe an apricot aroma. I'm not really getting much on the nose.
Taste: Oh, perfection. Very very good. I could absolutely slam this, but the point is to savor. I don't know what type of barrel this was aged in, but I would imagine some white wine barrel. It's delicious, tart. No off flavors. I thoroughly enjoy the taste. I'm trying very hard to not just crush this. The sour cultures are coming through very nicely. Big gulp after the second pour and it's just exactly what I like to drink.
Mouthfeel: It's quite light and drinkable. Almost a little too light, unfortunately. It's 5.5% and comes across that way, if even a little lighter. Tangy, tart, light, refreshing, enjoyable.
Overall: For as much as I absolutely love this and want to drink something like this all the time, it might not come across that way in the overall score. It's very light. That's not necessarily a bad thing but for such a special beer I'd prefer it to have more body. The appearance and aroma are both positive, but very subtle. I might be selfish but I'm looking for more. The taste is incredible. Nothing bad to say about it. The mouthfeel is a little disappointing as well. I know this is a golden ale so maybe I'm being too critical. Overall I love this and would very happily drink this again and would buy it as well, as long as the price point was reasonable.
