Sample at Wakefest. Clear golden with a white head. Smells of earthy and floral yeast character with some lemon acidity. Tastes of doughy malt with a touch of sweetness, grassy and a little herbal, with an earthy brett character in the finish. Medium body. All around excellent.

 

 

 

 

 

this is what these guys are all about for me, and its one of the best beers i have had from them, drinking super nicely now, really mature and obviously having undergone some serious evolution in the bottle, this is bright and fizzy and effervescent like champagne, and the color is there to match, radiant pale yellow, almost silver at first, minimal sediment. they start here with their classic saison, a belgian yeasty dry rustic take on the style, but here refermented with native yeast off of a honeysuckle blossom from their farm. for being wild, this yeast has an oddly cultured and familiar brett complexion to me, a brett drie type, but super mature, dried out, and old worldy in this beer, amazingly delicate and bright though too, unexpectedly floral, winey, and refined. the grain base seems lighter here to me than in the original saison they have become famous for, maybe just way drier and more mature now, but its color is paler here, its body less, and the flavor of the grain even mellower in favor of the yeasts. the belgian estery element is somewhat more tame too, here combined with this funky wild element to create a much more dynamic fermentation complexion, again oddly familiar and known sort of bretty for being isolated from their farm. i assume both yeasts are still in play, and that this isnt 100% fermented with the brett, there is definitely still a belgian profile to this. summery white wine, fresh flowers, guava, green tea, and mellow tartness. rushing carbonation and so dry its almost gone before it starts. a glorious beer, another reason to love these guys! i hope to see more wild stuff like this, i could only imagine their hoppy summer saison with this yeast!

Wow beer and one of the best saisons that I’ve had in recent memory. Big honeysuckle vibe. Mild funk. Finishes dry. Beautiful spring beer on a lovely evening.

-hazy to cloudy white-yellow bottle pour with a very fluffy foam cap ~5cm+! The aroma is big, Brett-like with light lemon citrus. The flavor matches the nose. The flavor is funky overall, but delicately so. A bit of tartness, with lemon and a spicy white-pepper, follows and there is a mellow base that seems oak-y (although I do not think there was barrel-aging). The finish is dry and clean and includes a floral aspect. This is a superb and immensely enjoyable beverage.

Purchased in Atlanta at Hop City Craft Beer and Wine for $13.99. This beer was a mirror image of some of the best saisons in the world. Earthy, yeasty, well-balanced.

 

 

 

A hazy, milky bright maize body has a creamy white blanket.

Smell is hay, horse blanket, funky cheese and woody walnut while taste is tart funk, even more funky than the nose, but still adds new notes of grapefruit, wild herbs, and phenolic spice via a big frothy feel and semi-dry finish.
