This is the base of the two Barrel-Aged renditions already on BA. Not sure why I'm entering the base saison, but I did my research. This Winter Saison has 333 ratings on UnTappd. Bought this 12 ounce copy from Beer Drop. After one sip, I was glad I bought two... and look forward to buying more next winter. This first can really helped a dinner of leftovers, and that is sufficient for C'est to make it into my stable of go-to saisons... providing I can keep getting it from Beer Drop.
C'est does have more alcohol that exceeds the saison's standard. But C'est conceals itself well (thanks for the old man's portion of a 12 ounce can.) While the yeast could be more active (I recognize the alcohol keeps it down), Smells and Tastes are a well-integrated fruit medley. A dry after-taste is particularly unique and interesting; driven mostly by some spices associated with the High Holy Days. But to be a winner in the saison class (instead of the base class), C'est needs to lower its ABV. While it is well-crafted, 9% pushes the envelope as a table saison.
What is most interesting about this saison is that the style really is drunk in three seasons and brewed in the winter. So Diebolt sort of borrows the idea of brewing a saison for the fourth season, in part because it really is a year-round beer now. And while Diebolt is most known for focussing on the obscure Biere de Garde, the saison is a cultural cousin across the border; but uses fewer hops than the saison. Yet both styles seem to have a more flexible yeast to stimulate their variable malt bills. While I've only had two saisons from Diebolt, they were both far above the American standard.
I want to comment on something somewhat unique to me. I am a fan of Diebolt, but I also am the only reviewer on the four brews I added during the last year. So guys, do me a favor and give Diebolt some positive reinforcement. buy from Beer Drop and every red-blooded American has no choice other than to help keep this farmhouse styles innovating.
