what a great beer! i love what wild flowers bring to a mild saison yeast strain in a delicate beer like this. something a little different for black sky, who i tend to associate with bolder stronger flavors, this is very relaxed for them, but as good as anything they make here. it has a great aroma, not quite as specifically floral as i expected it to be, but earthy and grassy and growing for sure, with some real bitterness from the flowers, almost tea-like, behind a saison stain that has an earthiness to it as well, some green apple and golden raisin fruitiness, and an incredible dryness. the flavor is just like the nose, with the flowers accentuating some characteristics of the yeast while not overpowering the light wheaty base beer. the yeast has a pepper note to it, the flowers are very bitter, there is a lot going on, but this stays majorly drinkable. dry and effervescent, still with some texture from the wheat, the feel is right on. i think the impact of the flowers is more in a bittering role here, and i would like to see them add a little more of a bright springy flavor to this, but i like the beer a whole lot. creative and well executed, i could drink ten of these...
