This VDS tripel could also be classified as a Belgian Strong Pale because it stays moderate within the tripel's complex characteristics of spiciness and yeastiness.
As tripels go, VDS has produced a large foam; but on the flip side the protein swirls don't last the glass. Smells are modest tree fruit (apple blossoms mostly). Tastes are well-balanced, particularly for its higher ABV. Instead of the tripels' style with a spicy finish, VDS brewed one suitable for the table that lets the food play. Medium-mouthed, plus soft so food can set in. Paired well with my veggie stew, full of garlic and herbs.
Only my second from VDS, I still give them very good Overall Hugs because they respect the Belgian Abbey traditions and use that logo as certification. VDS also has a new production plant. So here's hoping they start to get distribution more widely. (I bought this copy at Drankcenter Schotte in Waremgem.)

Orangeish brownish pour with medium fizz and not much of a head of which to speak.
Aroma is spicy yeast through and through. Fairly mild for the ABV but pleasant cloves and white pepper.
Flavor is solid but nothing to write home about. Mild spice up front, moving into a pleasantly boozy middle with some spice on the back. The finish is a bit vegetal, which I didn't care for on the first sip but came to enjoy.
You can search high and low and never find a 9% ABV beer that was less complex than this one. I'd say that's something of a feat. Nothing about it is less than good, but nothing about it really wows me, either.

L: pours a clear deep golden color with a small top off white head that disolves slowly. Some lacings on the sides of the glass.
S: melon,green apples,pears,honey and sugar.
T&F: follows the nose Inn most aspects. Fruity and sugary inn the start, then it gets a hint of spices inn the middle with a long dry bitterness inn the finish. Mouthfeel is creamy with a high carbonation and medium body.
O: A good and drinkable belgian strong ale, have all the typical belgian traits, but nothing overly exiting about it compared to other belgian beers. It should also be noted that this is a belgian strong pale ale, not a dark ale.
