A double india pale ale double dry-hopped with azacca, enigma and idaho 7 and aged on locally foraged sassafras leaves and lemon and lime zest

A: Pours a very lightly hazy medium golden honey in color with slightly heavier than moderate amounts of active visible carbonation rising quickly from the bottom of the glass and moderate burnt orange + caramel + dark golden yellow + bright yellow colored highlights. The beer has a three finger tall dense foamy light beige head that slowly reduces to few medium sized patches of thin film surrounded by a large patch of very thin film covering the remainder of the surface of the beer and a medium thick ring at the edges of the glass. Significant amounts of lacing are observed.
S: Moderate to strong aromas of herbal + spicy + black tea + pine hops along with moderate aromas of citrus/lime zest + citrus/lemon zest over the top of moderate aromas of bready + caramel + toasted malts with a light to moderate amount of caramel sweetness.
T: Upfront there are moderate flavors of bready + caramel + toasted malts with a light to moderate amount of caramel sweetness. That is followed by moderate flavors of citrus/lime zest and citrus/lemon zest. Finally there are moderate to strong flavors of herbal + spicy + black tea + pine hops which impart a just shy of moderate amount of lingering aggressive bitterness.
M: Medium bodied with moderate amounts of carbonation. Crisp upfront with a light to moderate amount of dryness in the finish.
O: Drinks pretty easily considering the strength and the alcohol is well hidden. Enjoyable old-school style West Coast IPA with a decent amount of aggressive bitterness. Glad I grabbed this one as the sassafras leaves + citrus zest work really well in it.
