Mashed with local barley malt along with a delicate blend of the finest caramel, chocolate and roasted malts. Boiled with locally foraged Shagbark Hickory bark. Fermented cool and conditioned cold with our preferred house lager yeast. Lagered cold for a total of 6 weeks and then transferred into freshly dumped Buffalo Trace bourbon barrels. After a brief slumber in the barrels, we then transferred this beer back into stainless atop more toasted Shagbark Hickory bark.

Picked up a 12 oz single can from the Blue Door Bottleshop in Hendersonville 2-17-25 for $6.00. Canned 1-9-25; consumed 5-1-25.

Beer poured dark brown with a very nice tan head.

Nose is of medium roasted malts, charred wood, vanilla, and chocolate.

Taste follows the nose as the malt and the bark gives notes of char and chocolate. Barrel imparts a touch of heat along with some vanilla and leather. Finishes with hopping that rounds this out very nicely.

Mouthfeel is medium bodied and smooth.

Overall, this is much better than anticipated, nice brew at a nice price!

Pours a black or deep brown when held to the light small darker tan head falls fast leaving little lace.

Aroma is lots of chocolate, anise, light roasted coffee notes, caramel, soft peat like notes, light woody barrel or is it the hickory bark. Lighter whiffs of the Buffalo Trace bourbon and vanilla, could probably increase the barrel time for bourbon notes for me, but overall soft and complex nice nose.

Taste follows the nose nice and smooth, roosted malts big chocolate notes, caramel, lighter anise roasted coffee hints, woody, peat hints. Light bourbon notes with vanilla, smooth no really indication this is 11% tastes more like 8%. About to easy drinking its complex but not big or over powering any anyway.

Mouthfeel lighter side for a big beer a big medium, with smooth carbonation.

Overall I like it not as big in your face as I imagined, smooth complex way to easy drinking for 11%, but very favorable and enjoyable.
