We chose Onyx Coffee Lab “Monarch” coffee - roasted to perfection in the Ozarks, to feature in this decadent imperial stout. It was then transferred into freshly dumped, extremely wet Buffalo Trace bourbon barrels and aged for over one year. Inspired by their bananas fosters latte, this variant was then aged additionally on fire roasted bananas, vanilla, toasted oats and cinnamon.

Appearance: Arrives onyx colored colored with a modest head that fades to a ringlet leaving spots behind
Smell: Coffee and banana with roasted tones, chocolate, cinnamon and Bourbon
Taste: Chocolate, banana and cinnamon forward with the coffee and Bourbon tones emerging in the middle; the Bourbon continues to build into the finish, providing a slightly boozy aspect
Mouthfeel: Full bodied with low carbonation; warmth in the gullet
Overall: Interesting and creative; the Bourbon here is just a little too strong to be the perfect complement
