a curious collaboration with some east coast meadery. orange blossom honey, in a kettle soured beer, very interesting. there is a lot going on in this one, and i think it marks the best wiley roots beer in recent months. the intersection of the honey with the lacto is impressive, its dry as can be, but all of the honey flavor and character isnt fermented out, which i think is a real achievement. its pale in color, hazy, a little thin looking, but holds its short head well. the nose is floral for sure, you get the honey right away, but also a little white wine tang, not overdone on the sourness at all, and with an almost apple cider complexion to it, raw and autumnal, very distinctive. the same is true in the flavor, where the honey really is forward, and the sourness cleans it up later on without stealing its moment. patient beer. unlike anything i have ever had really, and for once i am almost wishing for less carbonation, as the whole thing seems to progress a little faster than i would like it to. amazing use of honey, good mature restraint on the acidity, and a well crafted and pretty beer that really has no peers in the market right now. pricey, but worth it i reckon.
