Pours a deep, dark amber with notes of biscuity ginger snaps, subtle dark fruit, and earthiness from the Fuggle hops used.
The label features Koby St Gelais and his signature “Pitcher Pour” to de-gas the beer before taking a gravity reading. Pouring beer back and forth between pitchers before taking a gravity reading is done to remove dissolved CO2 from the beer, which can artificially raise the hydrometer reading and give an inaccurate gravity measurement. Gravity readings are taken throughout the fermentation process. The difference between the Original Gravity and Final Gravity determines the beer’s alcohol content.

It pours a weak coffee color, slight haze, reddish tints, so it's kinda chestnut brown when all said and done. Tan, tight head about an inch high. Falls to a generous cap. Decent cling.
Not much on the nose. Malty and grainy, a bit fruity, earthy, a little floral/ green.
The taste brings a bit more. It is reminding me of a gingerbread cookie with not too much ginger. Bready, a tad toasty, a little sweet malt, a little toffee or brown sugar, raw grain. A little dried fruit melange I can't quite decipher. Nutty and that flavor builds - kinda mixed nut style. This is probably weird, but I'm getting black tea at the back end of the taste. Earthy and slightly aromatic. There's some light floral notes and a very faint mint. I'm guessing Fuggles as the old world hop here. I'm thinking I have tasted this profile or dang close to it in a whole grain bread of some sort. It's not hitting hard enough to single things out but the overall flavor is pleasant.

Ok...mild seems to be the key word here. It's not a style I've had more than one of ( well, 2 now) so I don't have much experience with this style of beer. It's like it is so intentionally benign. I think it is spot on for what it's supposed to be, but wonder if maybe it's dialed back a bit too far? I like it just fine, but I don't have a feel for where it is on the spectrum of the style.
