This kolsch is brewed with Maine oats, and Mandarina Bavaria and Mosaic hops. Pours murky, but bright yellow with flavor notes of grain and light citrus.

a very modern take on the style here, more expressive on the hops than is traditional, more americanized in that way, but this really is a killer interpretation, done in collaboration with bunker, and shipped out to me this week by my homie in the fine state of new york. this is super pale straw colored, just barely frosted looking, and holding well over an inch of beaten egg white textured head, looks fantastic, if a touch less refined in the classic sense of bright and sparkly in this style. the aroma is somewhat minimal, a little clementine and herbal note from the hops, and some old worldy european yeast, lager-esque, simple and earthy but right for this beer. the flavor is quite a bit more robust than the nose, but its still fairly delicate overall, and for being as sort of modernized as it is, it still drinks like a kolsch, the updates are subtle and well restrained, so the grain still drives this, a simple european pils type base, just made a little fluffy feeling with the oat addition, not conventional but smart, i love that, gives some neat cereal depth to this which goes brilliantly with the yeast and also helps support the hops. citrus to me from the hops, clean lemon, fresh tangerine zest, but mellow enough to not take away from the more familiar elements of the style here. its crisp and tidy, but still has some fermentation character. there is a rawness i like the the grain, there is a freshness to the hops, and it all comes together in a beer i am sad to only have one of, this is a total ripper, super crafty and distinctive in a style that doesnt usually seem to leave a lot of room for that. very impressive, fully satisfying! not what i know other half for, but i am stoked on their effort here!
