Collaboration with Monkish Brewing Co.
Imperial Sour IPA with Monkish Brewing Co. Aiight Chill is a sour strawberry pie DIPA we brewed this with lots of 2-row, oats, raw wheat, and milk sugar before hopping it with Citra and Hallertau Blanc. We then conditioned it with strawberries, graham cracker, almonds, toasted coconut, maple, and vanilla.

L - 2-finger quick-fading head atop a translucent maroon body.
S - berries, brown sugar.
T - sweet strawberries, pie crust, brown sugar. No bitterness. Moderate sweetness. No booziness.
F - medium body and carb.
O - a tad too sweet, and not quite as good as the Homes collab, but the pie crust taste is a winner.

A: Rhubarb-nectarine. Smidgen of head, dots of lace.
A: Floral hops, berries, lime, coconut.
M: Med-full body. Thick and slimy jelly feel.
T: Strawberry cheesecake with an almond graham-cracker crust. Toasted coconut adds to the nutty and tropical fruit profile. A great dessert ipa as all the adjuncts really contribute and meld.

This is one of the best beers I’ve had. It’s a collaboration with Monkish. Pours a light reddish color. Classified as a sour IPA. Contains lactose. Solid coconut taste and great mouthfeel and overall.
