Brewed in collaboration with Yeast of Eden in September of 2019 using local pilsner malt, organic white wheat, and raw red wheat. After primary fermentation in stainless steel with saison yeast, Olora was conditioned in French and Hungarian oak barrels using both our house cultures and a significant amount of fresh, local honeycomb.

Breaking out the Offero, oversized wine glass for this experience, as much for the alliteration as to accentuate the aromas. It glows with an opalescent golden straw, with a tremendous foam sprouts out of the bottle. The head is surprisingly thin, off-white as it quickly forms a ring. Only a faint vail is left within a minute of pouring. Conversely, a thick viscus film clings to the glass with each sip. No legs form.
It is quite tart with an equally strong yeasty horse blanket introduction. Honey and bee’s wax are faint, behind fruity-floral notes. Warmth reveals orchard fruit working with spices. Extended warmth brings out oak.
The tartness is balanced by sweetness, otherwise it is very similar to the aroma. Fruit and floral qualities are equal partners with honey and wax. This is far from cloying and has definite umami to keep it in check. The finish is a mild and lingering version of the overall experience. Warmth draws out oats.
Once the initial sweetness subsides this becomes quite dry. Alcohol is as expected. It has a full body and a soft, slick texture. Effervescence is fine and ample.
This is a pleasant beer, with a ton of character. I enjoyed it on a cool, cloudless afternoon while listening to WWI and WWII planes maneuvering through the sky
