Six months since the last review, this seems pretty good to me. It has a lot of the Saison flavor but also a distinct funk. The Brett adds a nice edge to this, along with a drier sensation of the typical Belgian yeast. Aroma of fermenting pineapple.
Color is a dark amber that makes me think of whiskey. Some foam on the first couple of pours, but it's not a very enthusiastic carbonation. Some prickly mouthfeel, but it flattens out more than I would like, so pour vigorously.
Malty, winey, and dry with a hint of residual sugar. This is a very drinkable and likeable brew that is full of interesting flavors. Coconut, toasty malt, dried apricot, and a hint of sweet Vermouth. The Brett is really clean but there might be a sourish note coming up for the review six months from now.

billed as a grand cru saison with brett in cabernet barrels, this beer is well conceived but poorly put together. its got a rich coppery color but absolutely no head after just a few seconds. the nose is primarily the wine barrels, with a little bit of brett and some sugary caramel colored malt. the taste has a little sour funk, but is mostly sugary from incomplete fermentation. i dont know if they expected the brett to do more, or do it faster or what, but there is a ton of leftover sugar. there is a nice acidity from the wine barrel, and that flavor is what shines through the muck the best for me, but this one is all over the place, and being as flat as it is, a tough bottle to finish. alcohol is hot and the mouthfeel suffers as a result. maybe put one of these away for a year or two and see if the brett finishes the job or not, but its not worth opening now.

Fast moving fizzy head, doesn't really grow or stay. Brew is nicely clear and apple red. No lacing.
Slight tart aroma. Green apple, horsey, grass, bread, sewer gas.
Deep, rubbery, slightly harsh flavor. High heat, but well hidden by spice and funk. Vanilla and definite dry grape bite. Carbonation is unique and perfect, bittterness is mild, and sweetness is also mild.
Recommended, but it's a bit hard(er) @ $11/22oz. RIP Danny, thanks for providing many good beers and inspiration for many years to come.
