Pescado Rojo started from our Red Fish recipe and we upped the malt bill and really upped the hopping rate, hence the Grande. In collaboration with the folks at Jose Cuervo, we aged the beer in oak barrels that formerly held Jose Cuervo Tradicional. The barrel aging adds hints of oak, agave, and vanilla that complement the rich carmel malts to create a one of a kind hoppy, robust beer.

Copper body, mild haze, half inch of soapy, off-white head. Aromas of booze, malt, light spice. Tequila character emerges in the flavor as the beer is allowed to warm. Light to medium bodied with moderate alcohol presence. Sweetness makes this best shared a few ways.

A: The beer is clear yellowish amber in color and has a very faint amount of carbonation. It poured with a quarter finger high off white head that died down, leaving a thin layer of bubbles on the surface and a color around the edge of the glass.
S: Light to moderate aromas of caramel malts are present in the nose. Some hints of tequila start to peek through and become a little stronger once the beer begins to warm up.
T: The taste has flavors of tequila from the barrel aging along with caramel malts, notes of vanilla along with some hints of oak. The caramel is more balanced out with the tequila.
M: It feels medium-bodied on the palate and has a moderate amount of carbonation. Little if any alcohol burn is present.
O: The tequila in this beer isn't that strong, so it tastes more like an amber ale with some notes of tequila that lend some complexity.

Amazing beer.
Look: Fine lacing all over the glass. Beautiful dark amber.
Smell: Vanilla, Caramel, Tequile
Taste: Chocolate, Earthy, biscuit, hint of tequila
Feel: So incredibly smooth. Frothy and nice tingle, not too sharp.
Overall: An incredibly well balanced, well toned, well aged beer. Amber and tequila aging are a better pairing than I'd anticipated.

I really wanted to like this one. I got a bottle for a steal for $8.99. The is malty with an obvious hop presence. Reminds me a bit of an American Barelywine. Taste follows. Like an old ipa, the barrel does little to this. Like dirty soap. Not a fan of the style to begin with, but this doesn't prove me wrong.

750ml bottle. This is essentially Red Fish with a bigger bite. Same appearance: copper/amber color, very nice lacing. All the red IPA notes are still present: citrus, grapefruit, and a bit of pine. The barrel-aging accentuates the toffee malt character in the aroma and adds brown sugar and hints of wood and vanilla.
To compare the flavor profile with another well-known beer, I'd say it's like Double Bastard with a less assertive hop bite. Malty, somewhat sweet at first, with hop bitterness taking over toward the finish. Alcohol is very well masked, just a touch of booze with no Tequila sting. Mouthfeel is sublimely smooth and soft. This is pricier than any Flying Fish beer I can recall, but the barrel-aging makes a great beer even better.
